Making your own Self rising cornmeal mix

Karen's really good Sweet potato cornbread calls for self-rising cornmeal.  We sent Nathan to the store and he couldn't find self rising white cornmeal so bought white cornmeal and I found a recipe on line to make it self rising.  Here is the recipe:  For each cup of self rising cornmeal:  3/4 C cornmeal, 3 T flour, 1 T baking powder, 1/2 tsp salt.  It was really good and a hit with everyone, even the kids!

Notes on Three Cheese Baked Ziti page 143


Just a note on my recipe.  When I made it last time I added more sauce because you can't find a 28 oz. jar of spaghetti sauce anymore and 26 oz. isn't enough.  I added a small jar of sauce with the large jar and it wasn't too much.  Otherwise, I think it is a little dry.  It will serve 8 if they are not really big eaters or if you serve it with a big salad and dense bread.

Perfect Pie Crust, from Liz, page 180

 

This recipe is from my Mom, but it is new to our family.  My sister Erin introduced us to it when she made her now famous apple pie last Thanksgiving.  This is actually the Pioneer Woman's pie crust recipe.
This is a great and easy recipe.  The crust is so flaky-the flakiest pie crust I think I have ever eaten. While in Vegas last week, I picked up a jar of Trader Joe's apple pie filling so that is what this pie was.  This is only the 2nd homemade pie crust I have ever attempted, thus the ugliness of the final result!  It tasted 100% better than it looked. I need some help making my pie crusts look better!

I used regular Crisco this time, but I have some butter flavored Crisco in my cupboard and I think I will try making it with that next time.

 I love pie more than anyone in my family, so I think I will be limiting my pie baking to Thanksgiving when I actually have other people to help me eat it! 

One note: In the cookbook, the recipe says to form 3 evenly sized balls of dough to make 3 pie crusts.  Erin and I just form 2 balls as we like a thicker crust.
